Creole Style Meatloaf

Ingredients

1 ½ lb ground beef

½ lb ground pork

Large onion chopped fine

2 -3 cloves crushed garlic

Salt/pepper

¼ green pepper chopped fine

½ cup bread crumbs

½ cup milk

Preparation

Mix all of the ingredients together and place in a loaf pan. Bake at 350° for ½ an hour. In the meantime make the Creole sauce. After the half-hour is done take the meatloaf from the oven and pour over the Creole sauce and bake for a ½ hour more.

Creole Sauce

Ingredients

4 tablespoons chopped green pepper

1 clove crushed garlic

1 small onion chopped

¼ cup sliced mushrooms

1 can of crushed tomatoes

2 beef bouillon cubes

Several tablespoons tomato paste

Salt/pepper

Sauté green pepper, garlic, onion, and mushrooms until soft. Add crushed tomatoes along with their juice and bring to a boil. Crush in the bouillon cubes. Check for taste. Then add tomato paste until thickened.
