Cooking Vegetables with Sous Vide Machine

Saturday, July 01, 2017

A Sous Vide Machine doesn’t go up to the boiling point as well as it cooks food gently. (I don’t have this machine. I mostly use my food processor or stovetop).

Potatoes are a popular food during the summertime, whether mashed potatoes, baked potatoes, grilled potatoes, and fries.

  1. Consider cooking potatoes with olive oil. Place potato slices in a ziplock bag and add some olive oil, before placing these potatoes in a pot with water. Cook on 185 degrees Fahrenheit for one hour.
  2. Place a sprig of thyme, herbs, and asparagus in a different bag because these veggies require a different temperature for cooking. Use lower temperature for cooking asparagus.
  3. You can make your own homemade pesto in a food processor, blender, or Vitamix machine. But I prefer to use a food processor.
  4. Place arugula, parsley, kale, garlic, almonds, and other nuts in a bowl, and mix. Add sherry vinegar, juice from one lemon, and continue mixing. Then, add peco romano cheese or vegan cheese, and mix. Place this mixture over the cooked asparagus.

Pesto recipe consists of 2 garlic cloves, ¾ almonds, 4 cups of arugula, 3 cups of parsley, 1/3 cup of olive oil, ½ cup of grated cheese or vegan cheese, ¼ cup of sherry vinegar, juice from one lemon, and a pinch of salt and pepper. (I got this recipe from Sur La Table store, at a local event).

  1. I cook almost everything in a wok. My kitchen has very few modern conveniences. I cut things by hand, etc… Amazingly I have found a way to cook nearly everything with a wok. — This recipe and the combination of flavors seems very exquisite tasting and a must try. Thanks
