Coffee Bars – an Old Family Recipe

This is an old recipe that I got from my aunt, who loved coffee flavored anything! I never liked them as a child, but as I grew up and started drinking coffee, I grew to appreciate how delicious they are.

Ingredients:

  • 2/3 cup shortening
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup hot black coffee
  • 1/4 cup chopped nuts
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1 cup raisins
  • 1/2 teaspoon cinnamon

Directions:

Preheat the oven to 350 degrees

Spray a 13 x 9 glass baking pan

Hand mix coffee, raisins, and cinnamon and let stand for 5 minutes

Add remaining ingredients and mix well (by hand, not with a mixer)

Place into the 13 x 9 glass pan and pat down even

Bake at 350 degrees for 20 to 25 minutes

Let cool in pan for 10 minutes before cutting into bars

Delicious served with coffee ice cream!  Enjoy!
