Chicory Is Not A Weed

You may have guessed that I really like chicory. It’s a pretty flower that grows in waste places and it is also used as medicine. Did you know you can even roast the root to make a kind of coffee with it? I haven’t tried this yet but I think it will be good.

When we were in school, the chicory would grow from the cracks in the sidewalk and in the schoolyard. You can’t pick the flowers with your hands. It’s too tough! Use a knife instead. You can also dig up the roots and make your “no-coffee” coffee.
