Chicken and Mushrooms in Zesty Tomato Sauce

Ingredients

Chicken legs, drumsticks, or chicken breast halves

I medium onion chopped

Three cloves of garlic crushed

2 medium green peppers thinly sliced

½ lb. of mushrooms thinly sliced (you can use canned mushrooms but fresh are better)

One can of tomato sauce (be creative you can add pizza sauce)

Salt, red pepper (you can add a dash of red pepper flakes)

1 cup pastina or orzo

2 ½ cups water

Preparation

First, brown the chicken and remove. Add to the pan onion, garlic, green peppers, and mushrooms. Sauté 10 minutes. Stir in tomato sauce, salt, red pepper and add the chicken. Cover and simmer 20 minutes. Then stir in pastina and water. Cover and simmer until all is tender. Serve. *If making it this way add a chicken bouillon cube when adding the water.

The second variation which I prefer is not to stir in pastina and water. Let the chicken become tender and in the meantime boil spaghetti or your favorite kind of pasta separately and make some nice garlic bread. Once the chicken is done put the pasta on the plates spoon over the chicken and sauce and pass the garlic bread.

Optional: Once the chicken and mushrooms are done in the tomato sauce you can top them with shredded mozzarella cheese. Just sprinkle on the cheese, turn off the heat, cover the pan and let the cheese melt.
