6 Vegan Mexican Dishes

On a lazy Sunday, consider making your own vegan Mexican brunch. It involves creating your own Mexican Fiesta Party with six different Vegan Mexican dishes. Then, afterward, bring out your hammock and enjoy a Siesta.

The first recipe is Vegan Chipotle Sweet Potato Enchiladas. 

The second recipe is Vegan nacho cheese. It includes placing 1 roasted orange bell pepper, 1 cup of raw cashews, 1 cup of water, 1 teaspoon of salt, 1 teaspoon of turmeric, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/2 cup of nutritional yeast, and 1/2 teaspoon of paprika in a blender.

The third recipe is Vegan Chorizo Hot Dogs. (It is made with vital wheat gluten and seitan).

The fourth recipe is Vegan Ceviche Tostadas. She toasts the tortilla into crispy form. You can make more crispy tortillas to create your own tortilla chips for the vegan nacho cheese.

The fifth recipe is Vegan Tacos. 

  1. Fresh Tomato Salsa (pico de gallo) recipe includes diced tomato, red onion, lime juice, cilantro, sea salt, and ground pepper.
  2. Vegan Meat includes mushrooms, cumin, and chili powder. Chop mushrooms and place in a food processor, along with some cumin and chili powder. Mix well.
  3. Guacamole includes avocado, lime juice, sea salt, and ground pepper.
  4. Place tortilla in the oven, but bend it into a taco shape over the rack. And, I think it would be cool to use the Sweet Potato Flatbread recipe from that other video I posted earlier.

The sixth recipe is Vegan Fajitas Quesadillas.
